Real Simple Black Bean Soup
Serves: 4-6
  • 1 jar of tomato salsa (16 oz.)
  • 3 cups stock-low salt
  • 2 cans of black beans (15 oz.), drained and rinsed, or drained no salt version
  • 1 lime (optional)
  1. Stir and heat the salsa for 5 minutes in a large saucepan over medium heat.
  2. Add beans and stock and bring to a boil (stir occasionally).
  3. Immediately reduce heat and simmer for 15 minutes.
  4. Turn off the heat and let cool for 20 minutes.
  5. Place half in the blender and puree.
  6. Add back to the rest of the soup and reheat.
  7. Ladle into bowls and serve with a squeeze of lime.
