Bean and corn salad

Ingredients
  • 19 oz chick peas
  • 19 oz kidney beans
  • 19 oz black beans
  • 12 oz corn, drained
  • ½ cup chopped red onion
  • 1 sweet red pepper, diced
  • 2 cups celery, chopped
  • ------
  • Dressing
  • ⅓ cup lemon juice
  • ½ up fresh basil (1 T dry)
  • ⅓ cup oil
  • 1 garlic clove, minced
  • ½ tsp hot pepper sauce
  • ¼ cup fresh parsley
 
Instructions
  1. Drain and rinse beans if using canned. Combine salad ingredients.
  2. Blend or whisk together dressing ingredients; Add to salad and toss.
