Waldorf salad with cranberries

Ingredients
  • 3 crisp red apples, quartered and thinly sliced
  • 2 tbs fresh lemon juice
  • ⅓ c dried cranberries or raisins
  • ¼ c walnut pieces
  • 3 stalks celery thinly sliced diagonal
  • ------
  • Dressing:1/3 c silken tofu
  • 2 tbs oil
  • 1 tbs soy milk
  • 1 tbs maple syrup
  • ½ tsp grated lemon zest
  • ¼ tsp salt, to taste
  • 2 tbs fresh lemon juice
 
Instructions
  1. In bowl, combine apples and lemon juice. Add cranberries, walnuts and celery.
  2. Dsg.: in food processor or blender, puree tofu, oil, milk, maple syrup, zest and salt until smooth. Add lemon juice and blend 30 sec or until well combined and smooth. Drizzle dsg over salad and toss to coat evenly.
