Black Bean Sweet Potato Pie

Serves: 6
Ingredients
  • 2 cups sweet potato
  • 2 tbsp oil
  • 1 tbsp oregano
  • 1 tsp thyme
  • ½ cup diced red bell pepper
  • ½ cup diced red onion
  • 4 green onions, diced
  • 2 cups cooked black beans
  • 2 ½ cups blue corn tortilla chips
 
Instructions
  1. Peel & dice potato; cook then cool & mash.
  2. In a medium skillet over medium high heat, heat oil & add oregano & thyme; saute 1 minute.
  3. Add red pepper, onion & green onions; saute until just tender.
  4. Mash beans (may need some of bean liquid) & add to vegetables; mix. Set aside.
  5. Crumble 2 cups chips by hand or in blender until the texture or cracker crumbs.
  6. Spread in oiled 9 inch pan.
  7. Cover with bean-vegetable mixture, pressing down firmly.
  8. Spread sweet potato over bean layer.
  9. Bake at 350 until cooked through-15 - 20 minutes.
  10. Remove from oven; crumble remaining ½ cup chips on top of pie.
