Home > Recipes > Entrees > Black Bean Sweet Potato Pie Serves: 6 Ingredients 2 cups sweet potato 2 tbsp oil 1 tbsp oregano 1 tsp thyme ½ cup diced red bell pepper ½ cup diced red onion 4 green onions, diced 2 cups cooked black beans 2 ½ cups blue corn tortilla chips Instructions Peel & dice potato; cook then cool & mash. In a medium skillet over medium high heat, heat oil & add oregano & thyme; saute 1 minute. Add red pepper, onion & green onions; saute until just tender. Mash beans (may need some of bean liquid) & add to vegetables; mix. Set aside. Crumble 2 cups chips by hand or in blender until the texture or cracker crumbs. Spread in oiled 9 inch pan. Cover with bean-vegetable mixture, pressing down firmly. Spread sweet potato over bean layer. Bake at 350 until cooked through-15 - 20 minutes. Remove from oven; crumble remaining ½ cup chips on top of pie.
