Chickpea a la King

Ingredients
  • 1 onion, chopped
  • 14 oz mushrooms or ½ c fresh
  • 1 garlic clove minced
  • 2 tbs oil and 2 tbs water
  • 1 ½ c green peas, frozen
  • 2 red peppers, diced
  • 1 can garbanzos (15 oz)
  • Saute onion, mushrooms and garlic in oil and water. Add remainder.

  • Sauce:
  • 3 c water or garbanzo liquid
  • ½ c cashews (washed)
  • 3 tbs sesame seeds
  • 3 tbs chicken style seasoning
  • ½ tsp salt
  • ¼ c unbleached flour or cornstarch for gluten free (1 tbs)
 
Instructions
  1. Blend cashews in ½ cup of the water until smooth and creamy ; add remaining water and remaining sauce ingredients and blend.
  2. Add to saucepan and cook and stir until thick.
  3. Add vegetables mixture and heat through.
  4. Best made ahead of time to let the flavours blend.
  5. Serve over cooked brown rice or whole wheat flat noodles or fold cooked noodles into sauce, bake briefly (20 min) at 350 and serve.
