Lentil Barley Stew

Ingredients
  • 1-2 tbsp oil
  • ½ cup chopped celery
  • ½ cup green/brown lentils
  • ½ cup chopped onion
  • ½ cup barley or brown rice
  • 1 tsp basil
  • 1 cup shredded carrots
  • 6 cups water
  • 28 oz. Tin tomatoes
  • ½ tsp garlic salt
 
Instructions
  1. Saute onion & celery in oil in large pot.
  2. Add water, barley & lentils; bring to a boil then reduce heat & cook for 20 minutes.
  3. Add remaining, except carrots & simmer for 30-45 minutes, until ingredients soft.
  4. Add carrots & cook for 5 minutes.
