Pasta e Fajioli

Ingredients
  • 2 c sm pasta or broken noodles
  • 1 tbsp oil
  • 1 lg onion, chopped
  • 2 med carrots, chopped
  • 2 clove garlic, minced
  • ¼ c sun dried tomatoes, sliced
  • 1 tsp ea. basil, oregano
  • 28 oz tomatoes
  • 19 oz chickpeas
  • 19 oz kidney beans
  • salt
  • ¼ c fresh parsley
 
Instructions
  1. Cook & drain pasta.
  2. Heat oil and cook fresh vegetables. Add basil, oregano, sun dried tomatoes & tin tomatoes; bring to a boil and simmer for a few minutes.
  3. Add beans and pasta. Season & heat. Serve garnished with parsley and a little Parmesan if desired.
