Home > Recipes > Entrees > Pasta e Fajioli Ingredients 2 c sm pasta or broken noodles 1 tbsp oil 1 lg onion, chopped 2 med carrots, chopped 2 clove garlic, minced ¼ c sun dried tomatoes, sliced 1 tsp ea. basil, oregano 28 oz tomatoes 19 oz chickpeas 19 oz kidney beans salt ¼ c fresh parsley Instructions Cook & drain pasta. Heat oil and cook fresh vegetables. Add basil, oregano, sun dried tomatoes & tin tomatoes; bring to a boil and simmer for a few minutes. Add beans and pasta. Season & heat. Serve garnished with parsley and a little Parmesan if desired.
