Sandwich nut loaf
Serves: 10
  • 2 tbs butter
  • 2 cups chopped onion
  • 1 ½ cups ground walnuts
  • 1 ½ cups ground pecans
  • 1 cup rolled oats, not instant
  • 1 cup coarsely crushed bran flakes
  • ½ tsp salt
  • ¼ tsp oregano
  • ¼ tsp garlic powder
  • ¼ tsp thyme
  • ¼ tsp vegetable stock powder
  • ¾ cup boiling water
  • ½ c grated cheese (opt)
  • 6-8 slices tomato
  1. Put rolled oats the blender to grind a little.
  2. Dissolve stock powder in boiling water
  3. Spray or grease 8x3x4 loaf pan. Heat over to 350
  4. Melt butter in fry pan and sauté onion until soft.
  5. Add to bowl with nuts, oats, bran flakes and seasonings and mix well. Add stock and water and mix.
  6. Pack half into the loaf pan.
  7. Top with cheese if using and tomatoes, then add remaining loaf mixture.
  8. Bake uncovered for 30-35 minutes.
  9. Slice when cool.
Can be used as a cold plate item or in a sandwich In place of the cheese, you could use Hummus. If mixture is too dry, you can add half a cup of cream of mushroom soup or tomato soup undiluted. Nutty loaf leftovers can be used in a cold plate or in sandwiches
