Melt butter in fry pan and sauté onion until soft.
Add to bowl with nuts, oats, bran flakes and seasonings and mix well. Add stock and water and mix.
Pack half into the loaf pan.
Top with cheese if using and tomatoes, then add remaining loaf mixture.
Bake uncovered for 30-35 minutes.
Slice when cool.
Can be used as a cold plate item or in a sandwich In place of the cheese, you could use Hummus. If mixture is too dry, you can add half a cup of cream of mushroom soup or tomato soup undiluted. Nutty loaf leftovers can be used in a cold plate or in sandwiches
