Sweet & Sour Stir Fry

Ingredients
  • ½ cup carrots, sliced
  • 1 cup onion
  • 2 cups cooked soybeans
  • ½ cup juice from chunks
  • ½ cups tin tomatoes or 2 tbsp ketchup
  • ¼ cup brown sugar
  • ¼ tsp ground ginger
  • 1 cup green pepper
  • 1 garlic clove, minced
  • 1 cup drained pineapple chunks
  • 1 tbsp cornstarch
  • 2 tbsp oil
  • ¼ cup vinegar
  • 2 tsp soy sauce
 
Instructions
  1. Parboil carrots until tender-crisp.
  2. Drain.
  3. Heat oil in large frypan.
  4. Stir in green pepper, onion, carrots & garlic.
  5. Cook until tender.
  6. Add pineapple, soybeans & tomatoes.
  7. Stir fry a few minutes.
  8. Mix cornstarch, sugar, ginger, soy sauce, vinegar & pineapple juice together in a small bowl & add to pan.
  9. Cook & stir until mixture boils & all ingredients are coated with sauce.
  10. Serve with hot, cooked rice.
 
Notes
Alternate: Instead of soybeans, use 2 c firm or extra firm diced tofu
