Rice, Beans & Greens

Serves: 4-6
Ingredients
  • 3 cups water
  • 1- ½ cup jasmine or basmati rice
  • ½ tsp salt
  • 15 oz. Kidney beans, drained, rinsed
  • ¼ cup fresh parsley
  • 2 cups chopped kale or spinach
  • ¼ tsp garlic powder
 
Instructions
  1. Combine water, kale, rice & seasonings in saucepan. Bring to a simmer & simmer over med-high heat. Stir once, reduce heat & simmer for 15 minutes. Stir in beans & parsley. Fluff with a fork; turn off heat & let stand for 5 - 10 minutes.
  2. Suggestion: Serve with sliced carrots and a green salad.
