Carrot Pie

Ingredients
  • 1 cup dates
  • 2 ½ tbs cornstarch
  • ¾ tsp salt
  • 3 tbs soy flour
  • 1 tsp vanilla
  • 3 tbs oil
  • 1¾ cup cooked carrots, pumpkin or squash
  • 1 ½ cup soy milk
 
Instructions
  1. Soften dates in a little water.
  2. Whiz all ingredients in a blender or processor.
  3. Pour into a pie plate lined with a crust.
  4. Bake at 350 for 35 min, until set.
  5. Top with whipped topping.
