Fruited Bread Pudding

Ingredients
  • Pudding:
  • 4 c whole grain bread cubes
  • 2 green apples, grated, skin on
  • ⅓ c chopped dried apricots
  • ⅓ c chopped dates
  • ⅓ c raisins
  • 2 c milk, soy, almond or dairy
  • ⅓ c brown sugar
  • 1 tbsp cornstarch
  • ½ tsp cinnamon
  • ⅛ tsp nutmeg
  • ¼ tsp salt
  • ---------
  • Sauce:
  • 1 c milk, soy, almond or dairy
  • ⅓ c brown sugar
  • 1 tbsp cornstarch
  • ⅛ tsp salt
  • 2 tsp vanilla
 
Instructions
  1. Add all pudding ingredients to a bowl and mix well.
  2. Spoon into a 9X9 dish, cover with foil and bake at 350 for 35 min.
  3. Remove from oven and discard foil.
  4. To make the sauce, mix all except the vanilla in a small saucepan and cook over medium heat until thickened, stirring constantly.
  5. Stir in vanilla and pour over pudding before serving.
