Breakfast Fruit & Rice Pudding

Ingredients
  • 2 c cooked brown rice
  • 1 c crushed unsweetened pineapple
  • 1 tsp vanilla
  • ¾ c hot water
  • 3 tbs orange juice concentrate
  • ¼ c raisins
  • 2 c raw cashews
  • 2 tsp almond extract
  • 1 med banana
 
Instructions
  1. Mix rice, raisins & pineapple together & place in casserole.
  2. Blend cashews until a smooth paste in blender.
  3. Add remaining & whiz until smooth.
  4. Pour over ingredients in casserole.
  5. Bake at 350 for 45 min
  6. Serve hot.
