Cinnamon Rice Pudding with Dried Fruit
  • 3 c vanilla soy beverage
  • ⅓ c arborio, short grain rice
  • ¼ c packed brown sugar
  • 1 stick cinnamon
  • pinch nutmeg
  • ½ c chopped dried fruit
  1. In large heavy saucepan, combine soy beverage, rice, brown sugar, cinnamon and nutmeg.
  2. Bring to a boil; reduce heat and simmer for 30 min, stirring occasionally, until rice is tender.
  3. Stir in dried fruit and cook for 2 min or until fruit is soft.
  4. Remove from heat and let stand at room temperature for 3 hours or until thickened, stirring occasionally.
  5. Reheat, if desired, before serving.
(if no cinnamon stick, use ½ tsp ground cinnamon.)
Serves: 4-6
