Jean's Pancakes

Ingredients
  • 1 ½ cups of soy milk
  • ¾ cup whole wheat flour
  • 2 tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • ¼ cup of flax seed meal
  • ¾ cup of uncooked oats
  • ¼ cup dried cranberries
  • 2 tbsp sunflower seeds
 
Instructions
  1. Combine milk, flour, baking powder, baking soda salt and flax meal in a blender and blend well. Turn machine off, then add oats, cranberries and sunflower seeds. Pulse to blend; if too thick, add a little more milk. Let sit for 5 minutes before cooking pancakes. Serve with syrup or fruit topping.
